Air-Fried Apple Turnovers

Caramelized apples wrapped in puff pastry and air-fried until deliciously golden, crisp and flaky. Serve with softly whipped cream makes them the perfect ending to any meal.

Ingredients


Measurements:

  • large Granny Smith apple icon
    3 large Granny Smith apples

    (about 600g total) peeled, cored and cut into 1cm pieces

  • unsalted butter icon
    2 tbsp (30 g) unsalted butter
  • dark brown sugar icon
    ⅓ cup (65 g) dark brown sugar
  • vanilla extract icon
    1 tsp vanilla extract
  • fresh lemon juice icon
    1 tsp fresh lemon juice
  • ground cinnamon icon
    ½ tsp ground cinnamon
  • kosher salt icon
    ¼ tsp kosher salt
  • large egg icon
    1 large egg
  • water icon
    1 tbsp water
  • sheet frozen puff pastry (24cm square) icon
    2 sheets frozen puff pastry (24cm square)

Instructions

  • 1Place the apples, butter, sugar, vanilla, lemon juice, cinnamon and salt in a pot over medium heat. Cook, stirring occasionally, for 3 minutes, or until simmering. Cover and continue cooking, stirring occasionally, for 8 minutes, or until the apples are tender and the syrup is thick.
  • 2Spread the filling in a shallow dish and refrigerate for 20 minutes to cool. This will prevent the pastry from getting soggy. Meanwhile, continue to the next step.
  • 3Whisk the egg and water together to make the egg wash. The water thins down the egg making it easier to brush.
  • 4Cut each pastry sheet into 4 squares. Leave one square on the board and refrigerate the remaining until ready to use.
  • 5Working with one square at a time, brush the edges with the egg wash. Place a heaped tablespoon of the apple mixture in the center. Fold in half and press to remove air bubbles and seal. Press with a fork to secure the seal. Place in the refrigerator and repeat with the remaining pastry and filling.
  • 6Refrigerate for 30 minutes, or until the pastry is firm.
    Tip: Turnovers can be frozen at this stage for up to 1 month. Thaw for 20 minutes before cooking.
  • 7Set the oven to Air Fry, Super Convection, 165°C, for 26 minutes and press Start to preheat. Meanwhile, continue to the next step. 
  • 8Brush the turnovers with the egg wash and score the pastry 3 times. Sprinkle with the sugar. Spray the air fry basket with oil and place the turnovers, evenly spaced in the basket.
  • 9Once preheated, place the basket in rack position 3 and cook for 26 minutes.
  • 10The turnovers should be browned, puffed and crisp. If not, cook a little longer. 
  • 11Dust with sugar. Serve warm or at room temperature.
